Here’s the Thai Soup Recipe by Cyril Lignac (Tous en cuisine).

Ingredients for 4 people.

  • 2 liters of homemade chicken broth
  • Sticks of 3 lemons
  • 3 lime or combo holder (dry)
  • 2 fresh peppers
  • 1 piece of ginger 5 cm
  • 2 packets of cabbage
  • 10 small pieces of corn
  • 4 tomatoes, washed և cut into cubes
  • 1 ch.c. tablespoon red pepper paste
  • 8 ch.c. tablespoon nuoc mam sauce
  • 1 ch.c. ground coriander
  • 1 ch.c. grated garlic
  • Juice of 2 limes
  • 12 raw royal shrimp
  • 1/2 bunch chopped Thai onion
  • A few coriander leaves
  • Finely salt և ground pepper


  • 1 cutting board + 1 knife + 1 small knife + 1 tablespoon
  • 2 small salad bowls + soup plates or bowls
  • 1 pot + 1 microplan grater + 1 spatula + 1 bucket
  • A few tablespoons

Peel a squash, grate it and slice it.
Divide the lemongrass stalks in half.
Dip lemon grass, lime leaves, pepper, ginger in hot broth, cover and bring to a boil.
Add corn և tomatoes.
Chop Pak Choi cabbage, dip in the pan, then cook for 10 minutes.
While the broth is cooking, peel the shrimp, taking care to remove the shells with a small knife.
Add red pepper paste, nuoc-mâm sauce, coriander powder, garlic, lime juice to the broth.
Add the shrimp and cook for 2 minutes.
Serve in deep plates.
Sprinkle with onion and coriander
