For four people you need: 600 g chicken thigh without bones; 3 minced garlic; 5 pieces of ginger; 2 leaves; 3 tablespoons Shaoxing rice wine; 1 tablespoon dark soy sauce; 2 tablespoons soy sauce; 1 tablespoon oyster sauce; 1 teaspoon sugar; 2 spring onions; 25 kg of chicken broth; 1 tablespoon potato starch; to make vegetable oil.
Pour a drop of oil into the wok, cook the chicken thighs on a high heat, pre-cut by 3 cm by 3 cm, for two or three minutes. Book.
Clean the wok. Add a little more oil տ fry the minced garlic, ginger և julienne for 1 minute on medium heat. Add chicken thighs և cook again on high heat for one minute.
