It is autumn, pumpkin season. These large vegetables (pumpkin, squash, spaghetti pumpkin, butter) add color to our kitchens and are ideal for making good little comfort dishes.

Ingredients

For 4 people: 1 quarter pumpkin (about 1 kg), 150 g red lentils, 1 onion, 1 carrot, 2 peeled garlic, 2 cm fresh ginger, salt, 1 tbsp. c. turmeric, 1 tsp. ս. tomato paste, 200 ml coconut milk, vegetable oil և fresh coriander.

Preparation:

Peel a squash, grate it and slice it. Cut it into large cubes, then put it in a saucepan without adding water. Add crushed garlic and grated ginger, then turmeric powder, which you can replace with nagari spices.

Heat on low heat for 2-3 minutes, stirring constantly so that these last ingredients do not burn. Add about 1 and a half liters of water (vegetables should be completely covered), then lentils and tomato puree. Bring to a boil, lower the heat and simmer for 20 minutes. Mix, add coconut milk ել season with salt.

Finally, you can adjust the density of the soup. If it seems too thick, add water, and if it seems too liquid, continue to cook for a few minutes, without the lid, of course.
