Ingredients

1 C. butter
– 1 onion, sliced
– 2 cloves of garlic, minced
– 1 cup of dried green lentils
– 4 cups of beef or chicken broth
– 1 C. ground cumin
– 3 cups carrots, sliced
– 2 glasses of milk
– 4 cups fresh chopped spinach
– Salt և freshly ground pepper to taste
– Croutons to taste
– Flat parsley or cilantro to taste

Preparation:

STEP 1:

Heat the butter in a saucepan over medium heat, cook the onion and garlic for 2 minutes. Add the lentils և continue to cook for 2 minutes. Add broth և cumin և season to taste. Bring to a boil, then cook on low heat for 20 minutes.

STEP 2:

Add carrots and simmer for 15-20 minutes, or until carrots and lentils are soft. Add milk and spinach փ simmer for 2 minutes. If desired, decorate the dishes with croutons, parsley or cilantro. Serve.
